Buckwheat Hot Cereal.


I ventured down to Pro Organics Saturday market with my mom this past weekend and picked up some Buckwheat Kasha along with an amalgamation of vegetables. I have never cooked with buckwheat before so I was excited for a new experience! (Super huge shout out to my mom for soaking her quinoa she bought at the market prior to cooking - love this!!!)

Buckwheat Hot Cereal

Ingredients:

1 cup buckwheat groats {soaked}
3 cups water
2 cups almond milk
2 tsp. cinnamon

Directions:

Bring the above ingredients to a boil and then simmer uncovered for 30 minutes, stirring occasionally. Cooking time will depend on how thick you like your cereal. I added two Tbsp. of organic maple syrup and 1/4 cup of butter. Cook until melted, stirring.

If you like a thicker cereal, I would recommend reducing the amount of water. You could also add some fruit or sliced banana which would be delicious!

PS. I have a confession. I will continue using butter throughout this month. I don't have positive feelings about artificial vegan spreads, etc. so for health reasons I'll continue using it! I will substitute for coconut oil where I can though!

I don't think you should ever have to apologize for the choices you make in your diet. With that being said, I'm only saying this because you have said that you are going vegan for a month to see how it affects your health. Eating butter is still going to keep dairy in your system, I'm sure that's obvious to you, but even that little bit can still have an impact. For example (and I apologize that this is a mommy example but I think it's a good one), many nursing babies have an intolerance for dairy protein, causing mothers who wish to continue nursing to cut out ALL dairy. Firstly, it takes over a week for your body to truly get rid of all that dairy protein and if any little bit is reintroduced, the baby can immediately go back to having it's previous symptoms (usually gassiness, diarrhea, blood in stool). And that's after bring processed by the mother and passing through the milk.

Sorry if that was unwelcome! I just think that every little bit counts. You're probably the same as me anyway in that I so rarely use butter (vegan or otherwise, we have both), but I just had to add my two cents.

I wish you were blogging more!! You must be so busy I'm sure, it was nice to see some posts from you pop up!
